Banana Butter Bread

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 cup of flour
How
to bake:

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C).

With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in.

Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
Banana Bread Recipe

1/2 cup butter
1 cup granulated sugar
3-4 very ripe bananas, mashed
1 large egg
1 tsp vanilla
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/2 cup chopped walnuts
1/2 cup semisweet chocolate chips

to bake:

Melt butter and let cool to room temperature. Preheat oven to 350 degrees F. Grease a loaf pan.

In a large mixing bowl, beat melted butter and sugar together. Beat in mashed bananas, egg and vanilla. In a medium bowl, whisk together flour, baking soda, baking powder, salt and cinnamon.

Fold flour mixture into wet ingredients until just combined. Do not overmix, or the bread will turn out tough. Stir in nuts and chocolate chips. Pour into prepared loaf pan.

Bake 50-60 minutes until firm to the touch
Banana Bread Cream

1/2 cup butter
2 egg
3 large very ripe banana
1 1/2 tbs sour cream or buttermilk
1 tsp fresh lemon juice
1 cup sugar
2 cups flour
1/2 tsp baking soda
1 1/2 tsp baking powder
1 cup chopped nuts (optional)
How
to bake:

Combine dry ingrediants in large mixing bowl.

Place butter,eggs,bananas,sour cream,and lemon juice in blender or work bowl of food processer,whirl until smooth.

Pour over dry ingrediants,add nuts and stir until just moist. Pour into greased loaf pan.

Bake in 350 degree oven for 55-65 minutes or until skewer inserted comes out clean.
Chocolate Banana Nut Bread

3 ripe bananas, mashed well
1/2 cup toasted pecans, coarsely chopped
1 3/4 cups flour
1/4 cup cocoa powder
3/4 cup granulated sugar
1/4 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips
1 tsp pure vanilla extract
2 eggs, lightly beaten
1/4 cup unsalted butter, melted and cooled
How
to bake:

Preheat oven to 350 degrees F and place oven rack to middle position. Butter and flour the bottom and sides of a 9 x 5 x 3 inch loaf pan. Set aside.

Place the pecans on a baking sheet and bake for about 8 - 10 minutes, until lightly toasted. Let cool and then chop coarsely (be sure to leave a few aside for garnishment if desired).

In a large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Set aside. In a medium-sized bowl, mash bananas.

Add eggs, melted butter, and vanilla. With a rubber spatula lightly fold the banana mixture into the dry ingredients until just combined and batter is thick and chunky.

Fold in the pecans and chocolate chips. Pour batter in prepared loaf pan. Garnish with whole pecans, if desired.

Bake until bread has risen and a toothpick inserted in the center comes out clean, about 1 hour.

Place on a wire rack to cool and then remove the bread from the pan. Serve warm or at room temperature.
Cinnamon Banana Bread

1 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
4 medium-size ripe bananas, mashed
1/2 cup sugar
1 large egg, lightly beaten
2 tbs canola oil
2 tsp vanilla extract
1/2 cup chopped walnuts, toasted
vegetable cooking spray
light whipped cream cheese spread (optional)
How
to bake:

Stir together first 4 ingredients in a large bowl; make a well in center of mixture.

Stir together bananas and next 4 ingredients; add to flour mixture, stirring just until dry ingredients are moistened. Gently fold in walnuts.

Pour batter into a 9- x 5-inch loaf pan coated with cooking spray.

Bake at 350° for 55 minutes to 1 hour or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes; remove from pan, and cool completely on wire rack.

Serve with light whipped cream cheese, if desired.
